The Best Chicken Nachos

I’m about to share a recipe that will change your life. Okay, maybe that’s an exaggeration, but these chicken nachos are THE BEST and are pretty simple to throw together. As always, this is a recipe to make your own. You can use a different type of cheese, add onions, whatever floats your boat. Our kids love the black beans in it so sometimes we double those. We’ve also tried other cheeses so get crazy, experiment, and make these fit your taste buds.

Rotisserie Chicken Makes Prep So Easy

One thing I really love is that you use a rotisserie chicken to make these chicken nachos. You don’t have to worry about cooking chicken, waiting for chicken to cool, etc. You just buy that rotisserie chicken from the grocery store, come home, shred it, and let it sit in some lime juice, salt, and pepper for a bit.

These chicken nachos are Benjamin’s absolute favorite. And, to be honest, they are better than most any restaurant nachos I’ve had. A handheld juicer comes in handy for this recipe.

Chicken Nachos

The BEST chicken nachos you will ever eat!

Ingredients
  

  • 1 rotisserie chicken
  • 2 bags tortilla chips You may can make do with 1, but I get 2 to be safe.
  • 1 lime
  • 2 tsp minced garlic
  • 1 can black beans, drained
  • 2 bell peppers, chopped
  • 1 block Monterrey Jack cheese shredded
  • 1 bunch green onions, chopped
  • 1 tbsp olive oil

Instructions
 

  • Shred your chicken, juice a lime over it, sprinkle it with salt and pepper. Let sit. The longer you let it sit, the stronger the flavor will be.
  • Preheat oven to 350.
  • Chop bell peppers and green onions, keep seperate.
  • Warm olive oil in saute pan over medium heat. Add minced garlic and drained black beans and bell peppers. Saute until soft, about 5-7 minutes.
  • Grab a baking pan. I use a glass rectangular one. Layer your chips, add chicken layer, add bell pepper/black bean layer, add green onion layer, and shredded cheese.
    You can repeat these layers or make a whole other pan of them, which is what we do.
  • Put in oven and cook 15-20 minutes, until cheese is melted.

Notes

We normally make two pans of this for our family because they are such a big hit. You can also just make one pan and keep layering the ingredients until they are all gone.
