I’m excited to share with you one of our favorite salads we’ve been enjoying this month. It’s been peach season here and we’ve incorporated the sweet, juicy flavor of peaches into our salads. Peaches aren’t just for cobblers and icecream anymore! May I present the Summer Peach Salad?
First, I’ve got to say I’m certainly not a food blogger or photographer, but I do want to share recipes my family have been loving so that you can enjoy them too! I could eat this summer peach salad over and over again!
Make it Your Own!
My first suggestion with salads is to always make them your own! If chicken isn’t your favorite, try shrimp! We actually forgot to marinate the chicken on this one so we sprinkled some salt, pepper, and garlic powder and cooked it in a grill pan on the stove. I threw some blue cheese in mine, the kids used ranch dressing (of course), and Margaret had a deconstructed salad! Make this summer peach salad to fit your taste!
1/2 cupsliced almondscan also use a different pecans or walnuts
1/2 cupchopped red onion
1cupyour choice of cheeseblue cheese, feta, mozzarella are all excellent choices
Vinaigrette
1/3 cupolive oil
3tbspbalsamic vinegar
1tbsphoney
1tspdijon mustard
Instructions
Chicken
Marinate your chicken in the olive oil, basil, garlic, lemon juice, salt and pepper for at least 2 hours or up to 24 hours. Did you forget to marinate it? No worries! Just sprinkle with some salt, pepper, garlic powder for a little flavor.
Grill your chicken. We use a grill pan on our stove. You can also just saute this in a pan. Once cooked, chop your chicken into bite size pieces.
Vinaigrette
Whisk together olive oil, balsamic vinegar, honey, mustard, salt and pepper to taste. Store in fridge until ready to use.
Assemble Salad
Either microwave or saute your frozen corn. I personally like to cook it in a pan to get a little char on it. But microwave works too!
Assemble your salad! Drizzle with vinaigrette.
Notes
Customize this salad to work for you and your family. Ingredient portions vary based on what your family loves. You may need more cheese, etc. This recipe is just a guide.
