Happy Friday, friends! This week’s meal plan is a little different because we are headed to the beach next week. Woohoo! But, no worries, I still have a simple meal plan for you, even if we are on vacation. We are staying in a house at the beach so we have access to a kitchen and to keep costs down (and because there are only a couple of restaurants nearby) we will be cooking most of the meals at home.
For breakfasts, we will be having pancakes one morning, eggs and sausage/bacon for another morning, and probably bars for the other mornings. I’m going to try and make some pumpkin bread loaves before we go too. Lunches will be the usual sandwiches, leftovers, and salads. We’ll also have a wrap option. Snacks will be a little more vacation-y this week. I’ll grab some crackers and such from Sam’s.
Monday: Crockpot Vegetable Soup. Monday is a busy day for us as we get ready to leave for vacation and get ready for our homeschooling community day the next day. In the morning, brown your meat (I use ground beef) and season it with salt and pepper. Next, drain fat and add to your crockpot. Add 5-6 cans of your favorite veggies and then fill to the top with chicken stock. To complete the meal, I’ll also make cornbread to go along with it.
Tuesday: Meatball Subs and Chips. This was a request from the kids. This will be our first night at the beach and it’s a great option since it’s quick to throw together. Either make or buy your meatballs and warm them in some pasta sauce. Once cooked, assemble your subs, top with mozzarella cheese and put in the oven to melt the cheese.
Wednesday: Hamburgers, Hot Dogs, and Fries. This is Margaret’s birthday and we asked what she wanted for her birthday dinner and this was her request!
Thursday: Tacos. I’m not sure if I’ll be doing ground beef or shrimp tacos. But one thing is for sure, there will be chips and salsa.
Friday: We will grab some seafood platters from the only seafood restaurant near us. It’s a pricey place for a family of eight so we call in some food (mainly for the adults and big kids) and we also eat on leftovers.
Saturday: Pizza night. This is our last night at the beach and the last time we were there we grabbed pizza from a new pizza place that had just opened up. It was really yummy and it also made packing and cleaning up the house for our departure a lot easier.
Sunday: Chicken Rice Bowls. I need something that’s easy and quick to throw together. Extra benefit? We’ll have leftovers for Benjamin to take to work. I make rice, shred some store-bought rotisserie chicken, and have topping out like black beans, corn, cheese, sour cream, and guacamole for people to build their own bowls.
