Happy Friday, friends! I’m here to deliver another simple meal plan for you. My goal is to provide my family (and me!) simple meals, that are delicious, and healthy. I’m currently trying to cut gluten out of our lives (even more so as I do more research) and am leaning towards more paleo type meals. Again, one of my big goals is for our food to be something we are excited about, mainly so I won’t be tempted to go out, so I hope you’ll find these meals so yummy, you won’t even notice that I’m cutting out gluten for us. 🙂
Breakfasts are without a doubt one of the hardest because most breakfast foods are full of sugar, ex: donuts, cereal, breakfast bars, pop tarts, pancakes, waffles, etc. I tried making smoothies one morning and people just weren’t full. This week we are having oatmeal, gluten-free pumpkin bread, and bars on busy mornings where we have church or homeschool community day. I’ve been doing a big ole spread for lunches everyday and they’ve been a big hit. Ideas for this: carrots, cucumbers, bell peppers, hummus, blueberries, apples, salami, turkey, ham, chicken salad, sweet potato chips. Snacks are fruit or gummies.
Monday: Mini Meatloaf Sheet Pan. This is a new recipe for us.
Tuesday: Baked Potatoes and Salad. This is such a cozy meal and I’ve been repeating it a lot lately. I cook my potatoes in the crockpot (just puncture some holes in them and wrap with aluminum foil) and it makes dinner time so easy!
Wednesday: Shepherd’s Pie. I’ve made Shepherd’s Pie before, but this is a new recipe for us. I’m excited to try it! If some of the ingredients look a little crazy, look at the comment section for things to switch out (almond milk for coconut or parmesan for nutritional yeast).
Thursday: Tacos and Black Beans. I typically just make the normal ground beef tacos.
Friday: Burger Bowls. This is another new recipe for us.
Saturday: Shrimp and Grits. This is a favorite! It’s also a super easy shrimp and grits recipe, if you are new to making this dish.
Sunday: Roman Chicken over Rice. This is an old favorite that I’ve pulled out my hat and has become a weekly repeater.
