Happy Friday, friends! Welcome back for a new week of simple healthy meal plan. I’m still trying to plan simple meals, on a budget, and are delicious, but I’m also trying to make them as healthy and real food as possible. It’s hard to manage both being on a budget and sticking to a real food diet, but we’re trying over here. lol
Breakfasts will mainly be oatmeal and fruit. If we can gather enough eggs from our silly free-range chickens, we’ll have eggs and bacon a couple of mornings. Lunches have been a big charcuterie type meal with carrots, cucumbers, bell peppers, hummus, salami, pepperoni, apples, blueberries, and cashews. Snacks are fruit, veggies, chips and salsa.
Monday: Chicken Rice Bowls. Rice bowls have been a big hit here lately. For chicken, I buy a rotisserie chicken and shred the meat, marinate it in lime juice with some salt and pepper. Cook the rice. Cook a can of corn, drained. Rinse off a can of black beans. Shred some cheese. Other topping ideas: cheese, sour cream, guacamole.
Tuesday: Loaded Baked Potatoes & Salads. This is an easy crockpot meal for me. I wrap the potatoes (holes poked in them with a fork) in aluminum foil and they cook in the crockpot all day. I air fry bacon, cut up lettuce, tomato, onion, turkey and ham, shred some cheese and people can build their own potato and/or salad.
Wednesday: Vegetable Soup and Cornbread. This is another crockpot meal for me. Brown a pound or two of ground beef. Add to crockpot with drained or frozen veggies of your choice. It normally takes around 6 cans of veggies for me. Then fill up the crock pot with chicken stock.
Thursday: Tacos and Black Beans. This is a weekly repeater here. I serve chips and salsa while I’m cooking. We normally do ground beef tacos, but you can fancy it up with these shrimp tacos.
Friday: We have Supper Club at a friend’s house. I’ll have some Aldi pizza for the kids to eat.
Saturday: BBQ ribs and veggies.
Sunday: Roman Chicken with Rice. This has become a repeater lately. It’s so flavorful!
